Feta, Edamame & Walnut Pasta: 15 minutes

I happened upon this recipe by way of combining my love for these flavors individually. They make a nice addition to any pasta. The slight sweetness of the edamame, balances the saltiness of the feta and garlic and the walnut pieces get your crunch fix on. I also added some red pepper flakes for the spicy that I crave. But it is good without. The best part of this healthy superfood dish is how quickly it comes together. Literaly boil your pasta, top with ingredients and voila!

Feta, Edamame & Walnut Pasta:

1 box of pasta (your choice, I used thin spaghetti)
2/3 cup olive oil (give or take, add more if the pasta is still dry)
3 TBS. butter
3-4 large cloves of garlic, pressed
Italian herbs (whichever suits your fancy I used a mix)
Salt (to taste)
Red pepper flakes (to taste, optional)
1/3 to 1/2 of a Feta block
1 cup of Edamame
1/2 cup Walnuts

Cook pasta according to package directions and drain, rinse with cool water, let sit for a few minutes.
Add olive oil, butter, garlic and spices to the pasta and mix until combined throughout.
Top with chopped walnuts, edamame and feta. Adding more or less of anything to your preference.
